Ravioli is a filled pasta encasing a variety of fillings from meats to cheeses to vegetables. Early versions of the pasta can be traced as far back as the Roman Empire, although it wasn't until the Middle Ages that the ravioli we know today was first developed. In Sardinia, ravioli are filled with ricotta and grated lemon rind. While ravioli were traditionally rolled and shaped at home, prefilled frozen ravioli can make a home cook's life much easier.

  1. In a dough mixer add the ingredients along with the food colour and knead a firm dough. for the black dough divide the quantity into half as it is less needed.
  2. In a pan add butter and oil and heat. Add onions and fry till translucent. Next add garlic and mushrooms and saute well.
  3. Next add chilli flakes, green onions, salt and coriander. Saute well until combines and water dries. Lastly add cream and mix. Turn off te flame immediately.
  4. Roll out the dough as shown and place the black dot on the orange sheet.
  5. Place the mushroom mixture on the reverse side of one sheet as shown and cover with the other sheet on top. Cut the raviolis using a cutter of 3". Boil them in water with salt.
  6. Now place the ravioli in a serving tray. In another pan, heat butter, add garlic and chilli flakes. Put this butter on top of the ravioli and enjoy.

This simple ravioli casserole is a no-fuss way to enjoy a warm and hearty pasta dish in a hurry. To assemble the ravioli, brush the egg wash over a sheet of pasta. Drop the filling mixture on the dough by teaspoonfuls about one inch apart. Cover the filling with the top sheet of pasta, pressing out the air from around each portion of filling. Press firmly around the filling to seal.
