Hey everyone, it’s Brad, welcome to our recipe page. Today, I will show you a way to make a special dish, enchilladas. It is one of my favorites. For mine, I am going to make it a bit tasty. This will be really delicious.

I've begun making my enchiladas casserole style, which saves a lot time, not to mention burned fingers. :) However, everyone still raves over my enchiladas, and this recipe recently earned a round of applause when I made them on a skiing holiday. The sauce is actually a modified Alfredo recipe and is also great over fajitas. Spread a layer of the sauce on the bottom of the dish before inserting the enchiladas to prevent them from sticking.

The ingredients needed to make Enchilladas:

  1. Make ready 1 lb Ground Beef
  2. Get 1 packages Flour Tortillas
  3. Take 1 each Onion
  4. Prepare 1 can Enchillada Sauce
  5. Prepare 1 can Refried Beans
  6. Prepare 2 cup Sharp cheddar cheese shreaded
  7. Make ready 1 cup Jack Cheese Shreadded

Spoon meat, a little grated cheese, a little black olives, and green onions in the center of tortilla. Roll up and place, seam down, in baking pan. Pour extra red sauce over enchiladas. Sprinkle cilantro over enchiladas before serving.

Steps to make Enchilladas:

  1. Heat Oven to 350
  2. Brown ground beef and onion chopped together till done.
  3. Spray 9x13 pan with cooking spray
  4. take flour tortilla and spread small amount of refried beans, add ground beef/onion mix and then equal amiunts of cheddar and jack cheese
  5. Roll up with opening at bottom. Repeat till pan is full.
  6. Top all enchillas with Enchilla sauce and cheese

Enchiladas can be filled with anything you can think of! In this Chicken Enchiladas recipe, I used shredded chicken breast, but here's a few more ideas. Vegetarian enchiladas are great with refried beans or zucchini and cheese, then topped with sauce and more cheese. Leftover taco meat or picadillo also makes a great filling for enchiladas. Using a large shallow bowl, dip each tortilla in enchilada sauce to lightly coat.
