The sauce is actually a modified Alfredo recipe and is also great over fajitas. Spread a layer of the sauce on the bottom of the dish before inserting the enchiladas to prevent them from sticking.

This easy recipe for Tex-Mex cheese enchiladas is a family favorite! Just lightly fry corn tortillas, roll them up with Jack or cheddar cheese, cover with a tomato and green chile sauce, more cheese, and bake. Pour in the red sauce, chicken broth, cilantro, salt and pepper. They can be prepared simply with just cheese, or be spruced up by adding a little bit of beef or chicken to appeal to the meat-eaters in your household.

Steps to make Enchiladas:

  1. cook the carne molda untill brown. set aside to cool.
  2. next you cook the tortillas not too cruchy has to be soft in order to roll.
  3. get a pan as if to make lasagna. sprede some salsa on the bottom and some cheese.
  4. fry the tortillas for like 6sec on each side. dip it in the salsa Verde.
  5. on the torillas after fried put a little carne molida and roll it do the same to all the tortillas layer them in the pan. between each layer sprede some salsa and sprinkle some cheese and add another layer of tortillas.
  6. preheat the oven on bake for 350°
  7. keep layering them till u reach the top. on top you add salsa and alot of cheese.
  8. you then put it in the oven for about 20min or till cheese turns golden brown.
  9. take it out the oven and you are ready to serve
  10. if you like add sour creme as toping with shreded lettuce and tomatoes and onions. and more salsa. if desired but still good without mmmm

When the enchiladas are completely cooled, scoop the enchiladas into a freezer-safe or an aluminum foil container. Cover the container with plastic wrap and aluminum foil. To freeze individual enchiladas, freeze the sauce on the side and wrap each enchilada tightly in plastic wrap before wrapping them in aluminum foil. Arrange the enchiladas in a baking dish. You can either place the chicken enchiladas seam-side-up or seam-side-down.
