Steps to make Frittata:

  1. Cut up all the vegetables roughly. In a non stick pan, sauté the chopped garlic on low heat in a teaspoon of olive oil until the garlic begins to turn golden.
  2. Add all the chopped vegetables and mushrooms, except the spring onions with the hardest vegetable going in first and sauté on high heat. When the vegetables are half done, at about 4-5 minutes, add the milk, dried basil, white pepper and chilli flakes and sauté for 2-3 minutes. Add 1/4 teaspoon salt. Switch off heat and mix in the spring onions and coriander leaves.
  3. Beat the eggs in another vessel with a pinch of salt. Preheat oven to 220 deg c.
  4. Transfer the cooked vegetables into a baking dish and pour in the beaten eggs. Sprinkle cheese on top and bake at 220 deg c for 15 minutes or until the top turns a crusty golden.
  5. Remove from oven and let cool for 2-3 minutes. Cut up into slices and serve!
