Thandai is an Indian drink made with milk, nuts and spices like saffron, fennel. It's served especially during festival of Holi and is very refreshing. This fresh, homemade Thandai tastes absolutely heavenly, far superior to the readymade mixes available in the market.

To begin with this particular recipe, we must first prepare a few ingredients. You can cook thandai using 16 ingredients and 9 steps. Here is how you can achieve that.

The ingredients needed to make Thandai:

  1. Take 3-4 tbsp Poppy seeds (khus-khus)
  2. Take 2 tbsp Sugar candy (mishri)
  3. Prepare Melon seeds, watermelon seeds a hand full
  4. Make ready 2 tbsp Fennel seeds(saunf)
  5. Get 8-10 Almonds
  6. Take Chopped pistachios 1tbsp fo' garnishing
  7. Prepare 8-10 Black pepper corns
  8. Make ready 6-7 Cardmum
  9. Make ready Nutmeg powder 1/4tsp small
  10. Take 2-3 tbsp Rose water
  11. Make ready Rose petels dry or fresh a few
  12. Make ready 2-2 tbsp Khus syrup, rose syrup
  13. Make ready glass Liquid chocolate for tempering the
  14. Take strands Saffron a few
  15. Get 1 leaf Edible silver varak (opt)
  16. Take 400 ml Icy chilled full fat milk

Instructions to make Thandai:

  1. Firstly soak poppy seeds, melon seeds, almonds, Cardmum,fennel seeds and black pepper corns in a cup of water overnight in fridge..soak saffron strands separately in 2-3tsp of water
  2. In the morning blend all the soaked ingredients mixture in a blender
  3. Strain the mixture with a muslin cloth and again add 1/4 cup of water and blend again.. Repeat the process 2-3times till the whole extract of poppy seeds and other ingredients take out
  4. Add icy chilled milk, saffron water, powder sugar candy(mishri) rose water and nutmeg powder and lot of ice in it
  5. Yo'r thandai for the "Holi festival serving"is ready
  6. Drizzle liquid chocolate at the inner walls of the glass and pour khus syrup in a glass and rose syrup in other glass and pour chilled thandai and garnish with cardmom powder, some chopped pistachios, saffron strands and rose petels u can set a silver varak fo'r more elegent look
  7. Tip_U can take yellow food colour(laddoos colour) at the place of saffron('cause of saffron is too much expensive) if preparing in a large quantity to make the drink budget friendly
