Add the Rotel tomatoes and the bay leaves. When I was growing up, jambalaya was a reality at least once a week. You would think that I would be tired of eating it, but quite the contrary. It's a great rice dish with a smoky flavor and an explosion of taste.

  1. Melt butter in large pot over med heat. Add onions, green onion, bell pepper, garlic, bay leaves, Jalepeno, creole seasoning, cayenne. Cover and cook veg is tender, stirring occasionally, about 15 min.
  2. Mix in tomato paste. add sausage, water, bouillon cubes, tomatoes, rice. Bring to a simmer. Reduce heat to low. Cover and cook until rice is tender. 45-55 min.
  3. Add shrimp and mussels 5 min before rice is done cooking.

Add the oil into a saucepan and place over moderate heat. This is a fantastic jambalaya recipe. I used seafood broth instead of chicken broth. Ironically the fresh Atlantic Cod although "optional" was my favorite part - it was chewy and flaky and chunky and absorbed the flavor. The order in which this is prepared is perfect.
