In the Kachi method of making biriyani, the raw ingredients are just marinated and placed at the bottom of a utensil and layered with partially cooked rice, saffron etc. Sealed & cooked on a slow dum process, trapping the steam inside for even cooking.

  1. Make ready chicken
  2. Take basati rice
  3. Get onions
  4. Make ready tomato
  5. Prepare pudina leaves
  6. Take coriander leaves

  8. Take Ginger garlic paste
  9. Get Salt
  10. Get Dhaniya powder
  11. Take Turmeric
  12. Take Garam Masala powder

You can also put a foil paper over the dough, and then cover the lid. This will help you in getting the perfect dum biryani. Heavy pan is necessary as we will put the Hyderabadi style chicken dum biryani for "dum" later in the same pan.

Steps to make Chicken Dum Biriyani:

  1. Marinate the chicken for about an hour in curd, chilli, powder, salt, turmeric, daniya powder, garam masala powder and ginger garlic paste
  2. Cut onions into thin slices and shallow fry in oil (Use oil generously. Excess can be drained later)
  3. Fry onions till they are brown and crispy. Drain and keep aside
  4. Add chicken into a kadai and fry in medium flame
  5. When water starts oozing, add chopped tomatoes. And cook until tomatoes become soft
  6. Add pudina leaves and chopped coriander leaves. Cook for 5 more mins. Make sure chicken is almost cooked.
  7. Add some of the fried onions and switch off the flame. Keep aside
  8. Rinse the basumati rice. Boil it in sufficient water for about 8-10 mins. Add two bay leaves to the water. It should be 3/4th cooked.
  9. Drain the water once the rice is 3/4th cooked. Make sure it is not completely cooked, as it might make the final biriyani very mushy
  10. Take a heavy bottomed container or a clay pot. Grease it with ghee
  11. Start layering. Start with a layer of rice
  12. Followed by a layer of cooked chicken
  13. Optionally add a layer of coriander leaves
  14. Add another layer of remaining rice
  15. Top it with another layer of the coriander leaves
  16. Finally layer it with all of the fried onions
  17. Pour around 4-5 tablespoons of milk
  18. Close the container with a lid. Place a weight on top of it. Cook in low flame for about 35-40 mins.
  19. Remove from flame and mix the contents well before serving it hot

Add in the marinated chicken to the pan. Keep the flame on medium and cover the pan with a lid. Biryani comes in all shapes and sizes depending on what part of India you are in. This Chicken Dum Biryani is a fairly straight forward one and cooks quite quickly. It's a recipe that I have modified to work in the modern kitchen (puff pastry to replace a whole wheat dough, steaming in the oven instead of on the stove etc) but it still works.
